01 · The shell we were given
An all electric kitchen doubles the load and moves the whole problem upstream.
The food court allocation had been set on the assumption of a gas-fired kitchen. An all-electric line roughly doubles the connected electrical load and changes the extract and make-up air balance with it.
The opening date was published before the shell was handed over. Anything that needed a new mall service application had to be resolved in the first fortnight or it would have consumed the programme outright.

Three routes out of the load problem. Two were closed before mobilisation.

Apply for gas
Mall policy did not permit a new food-court gas connection. Even if it had, the application alone would have eaten six weeks of a nine week programme.

Cut the menu
A reduced equipment line would have fitted the original allocation comfortably. It also meant opening a store that could not serve the brand's full national menu.
03 · Built
Revise the allocation
Heat load and electrical load workbooks were produced before handover and taken to the mall directly. The allocation was revised while the box was still empty. Full menu, no programme impact.
