01 · The shell we were given

The kitchen decided the plan, and the mall decided the hours.

Taco Bell's global standard fixes the service line, the equipment set and the customer route before anything about the building is known. On a mall floorplate that means the kitchen and service zone are planned first, to the brand's operational dimensions, and the seating is what the remaining area allows.

Every phase from concept to commissioning sat under one turnkey contract, so the extract route, the electrical infrastructure and the counter joinery were reconciled on paper rather than argued about between trades in a 10pm to 7am mall window.
